Stuffed Mushrooms



Makes 2 Servings

4 - White Mushrooms
1 - Weight Watchers String Cheese, shredded
1 oz - 2% Sharp Cheese, shredded
1 - Garlic Clove, minced
2 - Bacon Stripes, crumbled
1 Tbsp - Light Sour Cream
1 tsp - Oregano
1/8 cup - Plain Bread Crumbs 

Light Olive Oil
Freshly Ground Pepper

Preheat oven to 350 degrees.

1. Clean your mushrooms with a wet paper towel.  Remove the stems and cut off the hard end.  Chop up the stems and set aside.

2. Add a tsp of olive oil to a skillet over medium-low heat.  Add garlic and saute until golden, then add chopped mushroom stems and saute until soft.  Remove from heat.

3. In a bowl add the string cheese, bacon, sour cream, oregano, bread crumbs, and the mushroom stems garlic mix. Stir together.

4. Coat each mushroom with a small amount of olive oil then stuff with the mushroom stem mixture.  Bake for 20 minutes or until golden brown.  Remove from oven and add shredded sharp cheese and bake until cheese is melted.
