Cheesy Bacon Polenta
Makes 6 Servings
2 cup - Low sodium chicken broth
1 cups - Water
1/2 cup - 1% Milk
1 tsp - Salt
1 tsp - Black Pepper, freshly ground
1 cup - Polenta or Corn Grits
1/4 cup - Parmesan cheese, freshly grated
1/4 cup - Light sour cream
2 Tbsp - Light Margarine or Butter
6 - Slices of bacon, cooked and chopped
Bring the broth, water, and the salt to a boil in a saucepan over medium-high heat. Gradually whisk in the polenta.
Reduce the heat to low and cook, stirring often, for 20 minutes. Then stir in the milk, sour cream, Parmesan cheese, and butter.Cook another 10 minutes.
Top with bacon.
