Herb Roasted Baby Potatoes




Makes 4-6 Servings



1 lb – Baby mixed potatoes (white, red, purple, etc.)
4 – Garlic cloves, minced
½ tsp – Dried Thyme
½ tsp – Dried Rosemary
1 tsp – Parsley flakes
½ tsp – Salt
½ tsp – Ground black pepper
1 Tbsp – Extra Virgin Olive Oil

Preheat oven to 400 degrees.

Clean the baby potatoes and cut in half.  Place in a large mixing bowl.  Add olive oil and mix until all potatoes are coated.  Then add minced garlic, thyme, rosemary, parsley, salt, and pepper.  Mix.

Spread potatoes onto a greased cookie sheet in one layer.  Roast for 45 minutes or until potatoes are tender.
