Ingredients
3 egg whites
Pinch of salt
3/4 cup superfine baker's sugar
1/8 tsp cream of tartar
1/4 tsp vanilla extract
2/3 cup mini semisweet chocolate chips
1 tsp ground cinnamon (optional)
1 tsp ground cinnamon (optional)
Directions
Preheat oven to 300 degrees.
- Line a baking sheet with parchment paper, then set aside.
- In a mixer beat the egg whites and salt on medium-high until fluffy. (use a whisk attachment)
- Continue to beat on medium-high, gradually add the sugar about 1 tablespoon at a time. Next, add the cream of tartar, and vanilla extract. Increase the speed to high and beat until the mixture is thick and holds stiff peaks.
- Fold in the chocolate chips and drop 1/4 to 1/2 cup of the mixture onto the baking sheet. Bake for 30 minutes then rotate baking sheet and bake for another 20 minutes.
- Turn off the oven and allow the meringues to cool while still in the oven.
- Store airtight in a plastic container for up to 4 days.
