Creamy Cauliflower Puree

Ingredients

1 - Head cauliflower, cut up into florets
4 - Garlic cloves, minced
1/3 cup - 1% buttermilk
Salt and pepper to taste
1 Tbsp. - Light butter 
2 Tbsp. - Parmesan Cheese, freshly grated or 1 wedge - Laughing Cow Light Garlic & Herb Cheese
Chives (optional)

1. Boil cauliflower until soft. Drain, add garlic, buttermilk, light butter, salt, pepper, and puree until smooth. 

2. Stir in the cheese and serve immediately.
3. Garnish with chives (optional)
