Lemon Cucumber Salad


Makes 4 Servings
 
2 - English Cucumber, thinly sliced
1/2 cup - Red Onion, thinly sliced
 
 Lemon Vinaigrette
1 - Garlic clove, minced
1 Tbsp - Apple Cider Vinegar
2 - Lemons, juiced
2 tsp - Fresh Lemon zest
2 Tbsp - Fresh Cilantro, chopped
1 tsp - Balsamic Vinegar
1 tsp - Brown Sugar
Pinch of salt & Freshly ground black pepper
 
  1. In a medium bowl place the thinly sliced cucumbers and red onion. Set aside.
  2. In a small bowl combine all vinaigrette ingredients and stir well. 
  3. Pour vinaigrette over cucumbers mixture and mix.  Place in the refrigerator for at least10 minutes before serving.
