Makes 10 Servings
1 - Fresh Baguette
Butter or margarine
Pico De Gallo:
6 - Tomatoes, diced
1 - Small sweet onion, diced
1 - Jalapeno, seeded and chopped
1/2 Cup - Fresh Cilantro, chopped
2 Tbsp - Fresh lime juice
1 tsp - Salt
Pepper to taste
- Dice your tomatoes, onion, jalapeno, and cilantro. Place the ingredients into a bowl, and then add the lime juice, salt, and pepper. Place in the refrigerator for a least 1 hour before serving to allow the flavors to come together.
- Cut your baguette into 1/2 inch slices, and then coat each side with a little butter. Place the bread into a large skillet over medium heat until both sides are golden brown.
- Place a spoonful of your Pico De Gallo on top each bread slice and enjoy!
