Herb Roasted Baby Potatoes




Makes 4-6 Servings



1 lb – Baby mixed potatoes (white, red, purple, etc.)
4 – Garlic cloves, minced
½ tsp – Dried Thyme
½ tsp – Dried Rosemary
1 tsp – Parsley flakes
½ tsp – Salt
½ tsp – Ground black pepper
1 Tbsp – Extra Virgin Olive Oil

Preheat oven to 400 degrees.

Clean the baby potatoes and cut in half.  Place in a large mixing bowl.  Add olive oil and mix until all potatoes are coated.  Then add minced garlic, thyme, rosemary, parsley, salt, and pepper.  Mix.

Spread potatoes onto a greased cookie sheet in one layer.  Roast for 45 minutes or until potatoes are tender.

Gluten Free Belgian Waffles






Makes 3 Belgian waffles

1 1/3 cup - Bisquick Gluten Free Baking Mix
1 ¼ cup - 1% Milk
3 Tbsp - Unsweetened Applesauce
1 tsp - Cinnamon
¼ tsp - Nutmeg (optional)
1 - Egg
1 tsp – Vanilla Extract

Preheat your waffle maker to Belgian waffles setting (mine is setting #4)

In a bowl mix gluten free baking mix, cinnamon, and nutmeg. In a separate bowl mix milk, applesauce, and egg; blend well.

Add dry ingredients to wet ingredients, blend well.  Making sure there are no clumps.

Pour onto center of preheated waffle maker and spread evenly with a spatula. Follow your waffle maker’s instructions for cooking of the waffle.

Top with your favorite syrup and fruit!
